Hockey Nights are Baking Nights!

My husband plays in a drop-in hockey league every Sunday night.  Don't get me wrong, I LOVE to watch live sports, especially when my man is out there playing, but these nights home alone have turned into ME nights and I love them!  Nothing better then a little quiet time to get the house in order before another busy week starts up.  Usually this consists of something going into the oven while I find myself catching up on my girlie tv shows....
This past weekend while he was out I was in the mood for Snickerdoodle cookies, but I also had a couple of apples that were on the slightly soft side and needed to be baked into something.  Ta Da!  My now famous Appledoodle cookies!  I included the recipe below.  It's a must try ladies :) 

And I must add that this plate of cookies went quite well with a little french pressed coffee!

Ingredients:
1 stick unsalted butter (8 Tbsp)
2/3 cup brown sugar
2/3 cup white sugar
2 eggs
2 cups all purpose flour (I used wheat and they tasted just as yummy!)
2 Tbsp cornstarch
1 tsp baking soda
1/2 tsp salt
dash of nutmeg
dash of cinnamon
2 small apples peeled, cored and diced small

Cinnamon/Sugar Mixture Ingredients:
Approx 1/2 cup sugar
Approx 3 Tbsp cinnamon

Preheat oven to 350F.  In mixer, cream the butter on medium-high speed until it's soft, smooth and light.
Add sugars to butter and mix until combined.  Add eggs to the mixture and beat well. 
In a separate bowl, combine the flour, cornstarch, baking soda, salt, nutmeg and cinnamon.  Mix well!  Gently fold this into the creamed mixture.  Then add in your diced apples and again gently fold.  You don't want to over mix!

Form into balls of dough (I use one of those little cookie scoopers) and drop em into the cinnamon/sugar combo.  I love cinnamon so I add a little bit more than the 3 Tbsp I listed in the recipe. 

Bake in the oven for about 12 mins.  They may need to cook a bit more/less depending on your oven.  You will want them golden in color....they won't last long after they are out of the oven!

Another Hobby.....

Another hobby that I have shown immense interest in over the past couple years has been cooking.  I've decided that some of my favorite recipes are just going to have to
be posted here for you to enjoy.  Especially since everytime I cook or bake
something that turns out perfect gets it's picture taken for me to drool over for later when my waist doesn't agree with my cravings!

My mom's birthday wasn't too long ago and being from Texas, one of her all time favorite
desserts is red velvet cake.  I took it upon myself to try to make a layered red velvet cake from scratch and it was amazing.  Thinking about it and looking at these pictures has me in the mood to bake one again!

With yesterday being Valentine's Day I couldn't help but think of this yummy red dessert.....hmmm maybe I'll have to start baking another one!

 Another southern trait from mom are the pecans!  They only add to the amazing flavor of this yummy treat :)

I'm Starting Up Again!

Well, it sure has been QUITE some time since I've even opened up my blog!  SO much has changed in the past almost two years, but my camera has been
hard at work following my every move.  Speaking of move...I just moved back to
West Michigan from Nashville, TN at the end of last summer - I got married in September to the love of my life and my best friend :) - We are working on getting settled into our
new home which is taking longer than I expected, but it's all so much fun. 
My photography as a business was put on the back burner while all of these crazy life changes were going on, but now that I am finally settling into this new life, I thought
it would be a perfect time to jump back into my other passion...
Photography!
I'm slowly going through all of my pictures from the past couple years and am working on getting some sessions booked for our upcoming spring and summer seasons.  I have made it a resolution for this new year to attend to this blog much more then I ever have before, so I hope you enjoy all of my ramblings!

Until I get some recent pictures up, here's a nice picture of the winter season I'm SO ready to say GOODBYE to!  Come on Spring :)
